Vegitable Curry

I've gotten into a very recent kick cooking with my Crockpot. But I've realized, the recipes I know all have meat, which means no sharing with my roommate and that's no fun. So yesterday I tried a veggie friendly recipe: vegetable curry.

For all those Crockpot owners out there, here's the recipe:

4 Potatoes (peeled & diced)
1 onion (chopped)
1 red pepper (chopped)
2 carrots (diced)
2 large tomatoes (chopped)
1 6 oz. can tomato paste
3/4 c. water
2 Tbls. curry powder (I used yellow)
2 tsp. cumin seeds
1/2 tsp garlic powder
1/2 tsp salt
3 cups chopped cauliflower
1 10 oz package frozen okra

Place potatoes, onion, pepper, carrots, and tomatoes in Crockpot. Stir in tomato paste, water, & spices. Mix well. Add cauliflower. Cover & cook on low 8-9 hours. Stir in thawed okra before serving.

Time for lunch!
